Home cheese boxes fail in a familiar way: you chase sixty-plus percent humidity with a water tray, then wake up to fur that jumped overnight. Distance and airflow matter as much as the humidity number on a cheap sensor.
The microclimate problem A sensor in the corner of a box does not equal the air on the cheese surface. A tray of water placed inches from a young soft rind creates a local wet plume. Spores that would stay manageable in even moisture suddenly get a runway of condensation.
Tray placement that behaves Put the water reservoir on the opposite side of the box from the cheese, or on a lower shelf with a baffle so vapor mixes before it hits the rind. Elevate cheese on a clean rack so air can move underneath. Never set wheels on a towel that wicks tray splash.
Air exchange is not optional A sealed plastic bin with a wet towel becomes a terrarium. Crack the lid on a schedule, or use a box with small vents you can tape down as needed. Brief daily airing after you wipe condensation beats heroic antifungal scrubs later.
Read the rind, not only the gauge Slight moisture sheen can be fine for some styles. Beading water on the surface is not. If the rind looks wet-varnished, increase airflow and move the tray farther before you reach for vinegar washes as a daily habit.
Salt and cleanliness still count Humidity mistakes amplify dirty boards and undersalted surfaces. Keep aging wood or mats washed and fully dry between batches. Pat excess whey before the cheese enters the box so you are not aging a puddle.
A steadier target Aim for consistent moderate humidity with gentle air movement rather than a spike-and-wipe cycle. Soft cheese rewards boring environments. When the tray stops sitting in the cheese’s face, mold becomes a managed bloom instead of a takeover.
